Jamaican Vegetarian cuisine

Contrary to popular belief, Jamaican cuisine is known world over for more than just jerk chicken.

Wellness enthusiasts, culinarians and visitors alike would be the first to share how tasty and healthy Ital cuisine (it’s basically vegetarian food prepared without adding sodium)  and other plant- based meals can be.

Loop Lifestyle brings you a super easy vegetarian recipe using callaloo or amaranth depending on your geographic inclination (you can also consider it spinach’s cousin) with some ground provisions. The recipe comes from nutritionist Frances Mahfood’s wellness page- The Right Weigh.

According to Mahfood, the meal is low in sodium, is heart- healthy and high in fibre content.

What you will need:

2 cups callaloo (shredded)

1 tsp oil

1 small onion (chopped)

2 cloves garlic (minced)

1 small tomato (chopped)

A dash of salt

For the black eye peas salad:

½ cup black eye peas (cooked)

2 tsp olive oil

1 tsp lime juice

1 small onion (chopped)

1 clove garlic (minced)

Large bunch of fresh parsley (chopped)

2 small pieces of pumpkin



  1. Boil 3 cups of water in a pot and cook pumpkin until soft. Set aside
  2. Over medium heat, sautee all ingredients except the callaloo until soft
  3. Turn heat to low, then add callaloo and cover the pan. Let cook for 5- 7 minutes
  4. For the salad combine all ingredients in a large bowl  and set aside for 10 minutes
  5. Serve and enjoy!
